Bone Broth 101 & Healthy Eats
Bone broth is a wonderfully delicious, nourishing, nutrient-dense food that has been a core part of the human diet across continents and cultures for many thousands of years.
Our broth is made simply and traditionally--with great ingredients and a whole lot of time. We cook new batches every day in our restaurant kitchens. No third parties, co-packers, factories, or processing.
Process
It starts with 100% grass-fed and -finished beef and free range, antibiotic-free chicken bones. We add vegetables, herbs and spices to a giant pot, turn up the heat and let it simmer for 18 hours over a low steady fire to allow the nutrients in the bones to release into the stock.
Most of the broth we make gets served the same day in our restaurant, and a small portion gets filled in glass jars, frozen, and sent to your home.
Nutrition
Properly made broth is loaded with nutrients difficult to obtain in even a healthy modern diet. Collagen protein, glucosamine and chondroitin sulfate, amino acids glycine and proline, and hyaluronic acid provide key functions in the body, but are lacking in most of the foods we eat. Most can be taken in supplement form, but we prefer our nutrition to come from whole foods (and it tastes so much better!).

How to use it
We love to cook with it (braises, curries, soups, stews, rice, pasta sauces) or drink it hot with some of our delicious add-in ingredients like coconut milk, turmeric, or garlic.
What is collagen?
Collagen is the most abundant protein in mammals. It makes up all human connective tissue. Maximum collagen = glowing skin, hydrated joints, stronger bones & a happy gut.
Glucosamine and chondroitin sulfate are typically sold as expensive joint supplements for athletes. We’ll take a bellyful of broth over a mouthful of pills any day.
Amino acids glycine and proline are superstars of gut health and digestion, and are essential building blocks to a strong immune system and muscle repair. Oh, and glycine has been shown to significantly improve sleep and cognitive function… Google it.
Hyaluronic Acid is given as an injection to arthritis patients to lubricate their joints. Also an important component of skin, it naturally decreases as you age, eventually resulting in wrinkles.
Role during pregnancy
The vital nutrients in broth contribute to the health of mother and baby during pregnancy. Glycine is one nutrient that must be outsourced during pregnancy and contributes to fetal growth and protection from toxins. Collagen-rich broth is the best source of glycine.
